Repurposed an old dusty raspberry Pi 3B+ and as an audio input, I've connected 3 cams over RTSP.

I'm waiting for a clippy EM272 microphone 🎙️ and I'll compare the difference.
IP cameras have a crappy microphones though, but the bird chirp patterns are still easily recognised.

I'll see how stable the whole setup is, and I will do a follow-up post in a month or so, as a reply to this note.

I think that's one of those DIY project that awesome parents can do with their kids, which will make the whole family happy.
